Spicy Coleslaw salad

Coleslaw simply means cabbage salad, there are many variations for it with a vinaigrette or mayonnaise base, regardless of what you choose you can never go wrong with a cabbage salad.

Sufferers of type 2 diabetes should consume a lot of low-carb vegetables as it is a way to fill up the stomach without spiking the blood sugar levels. Cabbage is rich in fibre, a vegetable that should be consumed weekly, it is an inexpensive way to add vitamins K and C, as well as antioxidants to your diet, it also contains manganese, fibre, and vitamin B6.

The coleslaw most are accustomed to is drowned with mayonnaise, calorific and unhealthy, so I recommend you use your imagination and experiment with ingredients you want to add and the dressing of your choice.

Preparation Time: 20 minutes

Start to finish: 20 minutes

Ingredients:

  • 3/4 of a small green cabbage

  • 1/4 of small red cabbage

  • 1 small red onion

  • 1 carrot

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • 2 tablespoons vinegar

  • 1/2 lemon juice

  • 1/2 tablespoon English mustard or Dijon

  • 1 teaspoon chilli paste or sauce

  • 1 teaspoon sugar

  • Dash of black pepper

  • 1 handful chopped coriander leaf

  • 1 1/2 teaspoons salt

Method:

· Shred both cabbages finely and put in a bowl.

· Pour hot water over them to cover and leave for 20 seconds, then drain, chill and squeeze all the liquid out with the palm of the hands.

· Shred the carrot and the onion and mix with the cabbages.

· In a bowl or a jar put the mayo, sour cream, lemon juice, vinegar, mustard, chilli, salt and sugar and close the jar and shake until all is combined.

· Pour over the vegetables, add the coriander and mix. Adjust the salt to your liking.

· Leave in the fridge to chill at least 2 hours before serving.

Notes:

· For a low-calorie salad, you can substitute both the mayonnaise and sour cream with low-fat yoghurt. This makes it diabetic friendly.

· Adding celery and greens apples add another flavour.

· Keeps in the fridge for 4 days.
